If you ask us, there’s no such thing as a bad time to eat Louisiana crawfish. It’s just a matter of what’s on your plate, whether it’s a heaping pile of freshly boiled crawdads or a hearty, homemade Cajun dish. Regardless of whether it’s Heads or Tails season, you’re sure to find mouth-watering crawfish across Bayou Country all year long.
Heads Season
When Mardi Gras is on the horizon, you know that “heads” season isn’t far behind. It won’t be long before traps are filling up with mudbugs and we’re throwing the first of many crawfish boils.
During this part of the year, boiled crawfish is a must-have, with hot, juicy, peel-and-eat crawfish widely available by the pound. And don’t forget the fixins — potatoes, corn, sausage and more, all soaking up that savory, spiced flavor. Get your fill while you can — heads season wraps up early in the summer, which leads us to…
Tails Season
When the days grow long and hot, live and boiled crawfish are hard to come by. But that’s no problem in Houma, where we’re eating Louisiana crawfish all year long. Our Cajun recipes are front and center during “tails” season, when you’ll find crawfish tail meat in nearly any dish you can think of.
